for beginners I would recommend Mike's articles on this website. Technical enough to get an idea of the principles at work but simple enough not to scare you...

Once overproved you can't really do anything about it. yep :roll: I did try to bake the first batch but it was the yeasty brick that Julie talked about... My second attempt was much much better - a little sweet for my taste but getting the routine down pat is the main thing and then I can play with...

That would be lovely! Can you not store them and then soak them for a day or so when you want to work them? Isn't that what they do with willow? (I've dredged that up from somewhere in the murky depths of my memory so I don't know how accurate it is)

as I understand Catholicism it is forbidden for Catholics to talk to God directly, they must get a priest to do it on their behalf. Hence all the churches, priests, nuns, monks etc here in Ireland.
