What are the dark bits inside the back of cooked poultry?

When I eat poultry I aways love the little bits: heart, liver, kidneys, the bits of meat between the smaller bones, and most of all the dark, half-fluid stuff just inside the top of the back. My husband says it's called oedema, which sounds strange to me. It looks more like congealed blood. Does any...

I can't get shrimps here locally! Only potted, and then not often. And prawns are not nearly as nice.

Does anyone know whether you can freeze potted shrimps? I so love them but it’s not easy to buy them anywhere! xA

Chestnuts you always have to keep a few weeks for them to ripen properly. Like you do with walnuts, hazelnuts etc. All these nuts will then keep for quite a while, provided you put them somewhere not too damp and not too dry. We've got so many now I am doing a trial: some I bury in a tin in the garden and some others in a plastic jar. Some more I will just put in the ground like the squirrels do. The rest go in the wire net in the corridor, as always. I will let you know the outcome by spring!

These days, these days - I'm glad I can still pick them up from the road in my old age! I'm privileged to live in the countryside. I think I bought the tins when I was young ....

Good idea, that biscuit tin! I don't like storing everything in fridges and freezers when there are good old-fashioned alternatives.

In the past I have kept them for a while and then soaked them (because by then they had dried out) before cooking them with Brussels' around christmas. Thank you Aura. I am now marinading it. In a mixture of olive oil, pepper, salt and some too-sour-to drink water kefir. Which reminds me, I can offer water kefir grains, I will now look which forum that has to go under. Will let you know how the pigeon breasts work out!
