It depends where the island in the Med it is... it is extremely difficult to grow anything on Corsica, for example. Great. I think that these have been my problems. I rarely bother with the pre-washing of normal long grain, so end up with 'gluggy' rice (very apt description!). I have only recently managed to get rice just right. Regardless of amount of water, or any other factors, I have found that the pan is the crucial thing.
