Home smoking and curing by Keith Erlandson will teach you everything you need to know- it will tell you the domensions you need to keep the smoke cool enough etc and also has brines etc.
I was going to make a smoker out of m,y old dishwasher but I am going to build a stone one instead!

You could try nettle beer as well- it is lovely! I accidentally doubled the sugar though so it was more like nettle wine but it sure does the trick! :drunken:

I think wormeries are great and I would definitely recommend one! However word of warning if you are making your own- make sure there are no gaps for the worms to escape. Mine took about 3 weeks in a cold frame in scotland.....have patience, I am sure you will see them soon! I did plant mine quite deep but I will do them shallower next time!
