Maggie's right if you want a bit more moisture and creaminess then add cream and using buttermilk will help make a firmer texture. I occasionally make ricotta out of leftover whey from other cheese making endeavours and it tastes so much better than the heat treated tubs that you buy in supermarkets...

Very finely chopped rosemary goes particularly well in olive oil cakes, just don't use too much. Scattered on focaccia or added to regular bread dough makes for a tasty herby bread. We use long handled loppers on our fruit and nut trees, which saves a bit of up and down the ladder time. Some of the thicker branches take quite a bit of strength, but they are perfectly doable this way. Many of our neighbours use hydraulic pruners, which are much easier to use, but cost a fortune....

I love your plans to make it a sensory experience. It might be worth approaching local garden centres, seed sellers etc as many donate goods in exchange for favourable publicity.

A friend picked up an old Kenwood mixer at a boot sale (still going strong 10 years after he acquired it) and I lust after it every time I see it. :love10:
