It might be that the temperature recommended in the recipe is too high - they do get things wrong, and the transition between soft and hard ball fudge is quite fine . You could try cutting it by 5°C and see what happens. If it doesn't set, at least you'll have a nice sauce for ice cream!

I regard food growing as a small declaration of independence and a form of homage to God / Nature (delete as your taste suits) plus I can grow stuff that I cannot easily buy (curious varieties of tomato and so forth).

Thanks for the replies. On the points raised: - Wood is not wildly expensive here, and I imagine that painted white they would reflect light, which would help to an extent with the shading.
