elderberry wine (froze the berries last year). had to test a bit the other day in the name of science. it was bloody good. cider made from the finest T***o economy apple juice. with cloves to make it more classy. a kit beer due to laziness. gonna do a proper beer at the weekend though. with bog myrt...

well luckily, as we are planting the woodland, there will be proper deer fencing around half that field anyway. so it'd just be a case of finishing off the rest later. as for killing them, my OH does a bit of deer stalking and i think you are allowed to shoot your own deer on site unlike other farme...

what a lucky duckling :iconbiggrin: sorry to hear about those problems, tosca. what bad luck! i'll see how i get on with my youngsters and then reassess. I am pleased with the progress of my young chickens who seem to be getting very bold and hold their own against the matriarch/dictator of the pen....

I'm glad we're planting trees on most of it so it won't need draining. otherwise we'd be spending the rest of our lives sorting drains out! there's still one field that won't be planted though, i suspect keeping some sort of hardy edible beast on it would be the best use of it. my vote goes for a fe...

venison ham?

i have a roe deer haunch i would like to try to smoke and make into a ham. have looked online for recipes but they are all american and full of peculiar ingredients i dont understand. haven't smoked meat before so am a complete novice. any advice much appreciated :icon_smile:
