Dried tomatoes

Ordinary dried tomatoes are very nice but I've discovered a dried tomato that's absolutely fantastic.
I have no idea what the variety was as it was a case of doing "something" with a glut last year. These were soaked in red wine and then sprinkled with salt, dried oregano and basil and then dehydrated.
Last night we had our first winter lettuce, spring onions and finger carrots as a side salad for dinner, but no really ripe tomatoes :shock: . So I rehydrated some of these dried tomatoes by laying them on a plate and sprinkling red wine over and leaving for about half an hour.
The taste was out of this world, and I can see that a lot more will be done that way this coming summer.

I love the dried tomatoes, never done them like that, sounds fantastic. I dehydrate my tomatoes until they are leathery feeling, then store them in a mixture of dried garden herbs (dried are best in the oil), garlic and a little balsamic vinegar. Even the fussy wizard likes them, they store in the fridge and I just snip a few over things when we need them.

Ok, that's another recipe nicked. I'll let you know some time around October how it turns out. Assuming, of course, we do better this summer than last.

Has anyone tried the Russo Sicilian Togeta variety that is mentioned? They sound like themight suit us here.
