Sowing Claytonia (winter purslane/miner's lettuce), dragon's tongue and green wave (cut & come again oriental mustard greens) for the first time.

How many of each per person do you reckon?

Dunno exactly but I would probably sow two half metre long rows for 2 people, especially if one variety is cut and come again?

I would do one 1/2m row of each - I am not an expert by any means, but I have always used metre rows of each and always find myself flinging most of it into the chicken run.
