What have you got brewing at the moment

Post: # 156243Post craig.r »

Just thought i would see what everyone else has got Brewing ?

I myself have 1 gallon of each : Elderflower wine, Elderflower champagne, ginger beer, Blackberry (frozen berries from last year) and May Blossom wine.
Its Good to be green but even better to be self sufficient.

Not alot at the moment to be honest but then OH has been very ill recently so hasn't been able to do much brewing but we will be putting on soon:

1 Youngs Wine Kit (White) and possible flavouring with fruit juice
1 Youngs Wine Kit (Red) and possible flavouring with fruit juice
1 John Bull Chocolate Stout kit (40 pints)
1 Woodforde's Headcracker kit (24 pints)
1 Woodforde's Great Eastern kit (40 pints)
1 Geordie Mild kit (40 pints)
Prohibition Kit - Coconut Rum (6 bottles)
Prohibition Kit - Dark Rum (6 bottles)

We will also be putting on some Red and White kits to definitely be flavouring with fruit juices to be ready in time for Christmas (for ourselves and gifts)

OH is slowly gathering the kit for full All Grain brewing though and has already requisitioned one of my catering stock pots and is after the other one now

Just bottled
Sloe
Mixed berry
Dandelion

Awaiting bottling
another mixed berry (same fruit - it looked so good we put more yeast in and started again  _
Rhubarb x 2
Dandelion
Mixed fruit

and I just managed to get 10 demijohns from a charity shop so we'll hopefully be back on our gallon every 3 weeks plan. We worked out that's what we'd need to make enough to have 3 bottles/week.

Apart from the mixed fruit and sloe, everything else came out of our garden.

Chocolate stout hmmmm, does it have cocoa in? I have two commercial stout kits, but i wanted to make at least one a bit more complex, was thinking of adding a little coffee or molasses or something like that hadn't even considered chocolate. Can you (or anyone) recommend successful additives?

The ingredients on the tin say "Natural Chocolate Flavours" which I read to mean they used Extract of Cocoa which is quite expensive and you need to get it from a proper catering company.

An alternative is to steep some 'Chocolate Malt' speciality grains in hot water for an hour and add the liquid to your brew in place of some of the water, although adding some Cocoa is not beyond the realms of experimentation and Treacle is a great way of changing the taste of any brew ;)

The Barley Bottom is a good place to get speciality grains from and also if your planning on going all grain for your beer they have almost everything you need and are expanding their stock every week :D

Wow! Fifteen gallons of elderflower?! Do you mind me asking which recipe(s) you used? I want to make a 5 gallon batch and I've just been flicking through my books trying to decide which one to use, preferably one which doesn't involve too much extra expense (white grape juice concentrate/raisins or sultanas/lemons).... which is how I ended up on here.

I also have a gallon of gorse wine clearing at the moment... I am trying to ignore the fact that it resembles a very large urine sample every time I walk past it.

I started 3 gallons of red clover wine yesterday after spotting a massive patch of flowers. I've never tried it - always wanted to have a go but couldn't even find enough for one gallon, never mind three!
