My goodness what time were you out fennel picking this morning.
Does it make an aniseedy flavoured wine?

I have a Wilko strawberry wine kit on the go, and will start a fruit wine from rhubarb and ginger fairly soon.

Finally started my brewing thanks to great advice on here. Hurray! Got two large demijohns of elderflower on. And one empty demijohn waiting to go. Not sure what to try next. Do like the idea of wurzel..

Recipe makes 2 gallon
2lt-red grape juice.
1lt-ribena blackcurrant juice.
1lt-cranberry juice.
2kg-sugar.
1tsp-ritchies yeast compound.( per DJ )
water.

Method: make a sugar syrup with half of the sugar then leave to cool, then divide the sugar syrup and the fruit juices
into the DJs add the yeast compound fit the airlocks and ferment for one week then make some more sugar syrup with the other half of the sugar when cool add to the DJs and top them up to the neck with cold tap water fit the airlocks and fully ferment out.
when fermenting as stopped rack then add finings and the wine should clear in about 5 to 7 days then rack again and mature for about 6 to 12 months. :king:

Wilco's half-price 5-gallon Munton's Merlot kit (bargain!).. I've always been impressed by Muntons beer kits so thought i'd give it a go.

As its blackcurrant season I'd like to make some blackcurrant wine, but previous attempts have not been very good. I have 4 gallons in carboys "maturing" in the hope that time will mellow it out. Anyone got a foolproof blackcurrant wine recipe? I could easily fish them back out of the freezer !
