recipe makes two gallon
ingredients
5 pints of hawthorn berries.
1kg of sultanas.
2kg of white sugar.
1lt of red grape juice.
1tsp of GP wine yeast.
Water.
Method: take all the storks & leaves off the hawthorn berries then pour boiling water over them then strain and put in a pan with water then bring to a boil then simmer for 30 min then mash them with a potato masher then add to the FV and do the same with the sultanas and then add to the FV then add all the sugar to the FV and stir until the sugar as dissolved when cool add the grape juice and the GP wine yeast.
Cover the FV and leave in a warm place for 5 days. Note : stir every day, then strain and press the pulp using a fine muslin bag then add the juice from the pulp to the DJ's and top up to the neck with cold water, fit the airlocks and leave in a warm place to fully ferment out.
When fermenting as fully stopped rack add kwik clear after about a week rack again then mature for 6 to 12 months.

Do you think this would work well using water instead of grape juice? I generally don't use it in country wines.

How many gallons is this to brew? 2kg sugar along with the sultanas and grape juice seems a lot of sugar.
Water should work fine GA, especially with the sultanas in there. I'd be tempted to add some pectolase and some over brewed tea (tannin). The pectolase and a bit longer aging should stop the need for the finings.
