Just need to suss out what to do with them; I've got little piles of these green fruity things that have fallen off the tree. How do I get to a nut from here? If I try and peel it, it's a bit on the fleshy side

Those are probably nuts that have been shed by the tree for various reasons, i.e. not edible.
I'm pretty sure that walnuts are ready in September, not July. When they fall off the tree then, the green husks are split or totally fallen off.
The ones for pickling are picked about now and the whole nut is pickled, green casing and all, and you must be able to pierce it all the way through with a needle, to confirm that the shell hasn't started to form.

Oh, plus I seem to remember the juice from the green casing stains like buggery.

Thanks for the advice. I'll leave the fallen ones for the squirrels for now and I'll keep my eye open in September and see how many nuts I can gather :)
