I like quince, especially apple+quince fruit leather. Also apple+quince compote/sauce. The taste on it's own is a bit too strong for me, but a dessert with quince baked (long and slow) in port was rather good.

we have tons of quinces, four trees laden. tough as anything now but have used some as pectin source already although they are not yet ripe. mine all seem to be mouldy in the centre
