I like the idea of Elderberry Balsamic Vinegar. How'd'ya do it?

If you're looking for something pine-needly, you can use them alongside hops in beer. You can do a simple extract brew on a hob without much difficulty.

Here's a link to the Eat Weeds recipe for Elderberry Balsamic Vinegar:

I've made for a couple of years now and it's really worth doing - very rich and fruity. Great on salad.

I've not tried making beer yet - maybe pine needle beer will be my first!

Cheers
Malc

Had a lucky day foraging, I'm out in the States (Maryland) for my brothers wedding, only got here yesterday, on the bit of land the holiday house is on I went foraging and found.

Land Cress
Watercress
Hairy Bittercress
Ground ivy
Wild Onions
Water Mint

And that's just for starters today, just sat here eating a salad and having a Mojito from my foraging finds, happy days.
