Elderberries, how do I know they are ripe?

Here in Australia we have blackberries and Elderberries ripening up nicely and I am all good with my brambles but is there a way I will know when the elderberries are ripe?I have only encountered them as cordial before!

Look at the berry stalks (Immediately behind the berry), they change colour from green to red and start to become "limp". That is the point at which the berries are ripe for use.

Use a 1/2 inch mesh grid or a fork to remove the berries from the umbrel.
