St George's Mushrooms

Post: # 258284Post markpeace »

Woohoo, the rainy spell is at least good for something. Been for a little walk in my mushroom woods today, found masses of tiddly little ones which I've left to mature and then, to my suprise, a bit further on some good patches of mature specimins worth picking.

I found my first of the season today, only a small handful. With two morels, also found today, they were very tasty.

Jealous of the morels, I'd love to find some!

Don't think you'll have much luck trying to cultivate them, I'm afraid - I think the rings are a bit more difficult to establish that just planting (anyhoo, finding them wild is part of the fun!). I've tried throwing a few in the fields behind my house, hoping they'll drop some last spores - but no luck so far.

Wild Mushroom Fettucini
----
Rehydrated some dried morels (bought, I'm afraid) and chopped. Fried off morels with a load of the St George's, when they're nearly done, added wine and bubbled down - then a generous knob of butter and browned slightly. Added soaking water from morels and reduce, then added cream (goes a lovely capucino colour). That's your sauce, mix it with pasta and chop in some parsley. Yum

There are plenty of St George's around and I also found some more morels in woodchip. I have also seen early field mushrooms, fairy ring champignon, chicken of the woods, and three wood blewits!
