elderberry cordial and rowen jelly

Post: # 68634Post w.f.specialist »

Bizzare season it might be for fruits, berries & fungi. Today for example i was picking elderflower and ripe elderberries from the same tree.
Made first large batch of elderberry cordial and rowan jelly. :?

I made rowan jelly a few years ago. Because I was making it for the first time, I followed a recipe to the letter (it included some apple). The jelly was very bitter.... It's still in the cupboard!

Is it supposed to be bitter? And what do you eat it with?

you can use apple for added pectin esp crab, however i use lemon juice. It is very good as an accompinement to game dishes esp Venison.
Sometimes i often mix with elderberry too. :?

I'm glad to hear that rowan jelly is bitter - I shall just leave the berries for the birds then. They look so pretty on the tree for the short time before the birds get them anyway, and as I only have one young tree I don't really want to pick them!

So I suppose I didn't do anything wrong then. Well, I shall see if I can find somebody who eats game...

Or maybe the birds would like a bit of rowan jelly once the berries are finished this year?

Rowanberries are the same as Rosehips. Freeze them for 12 hours, and it is supposed to remove a lot of the bitterness.

Have to admit tho, it does seem to be an acquired taste, Rowanberry jelly that is.
