Winter Squash & Bean Stew

1 tin of mixed beans (or 250g dried beans)
2tsp oregano (or mixed herbs), 2 tsp cumin, 1tsp cinnamon, 1tsp cayenne pepper

2tbsp olive oil
1 medium onion
2 cloves garlic
One winter squash (bite size pieces)
2 tins tomatoes

Method

Fry onion until soft, add chopped squash and sauté for 10 mins (until soft)

Add herbs and spices and garlic

Add tins of tomatoes, and simmer for 40 mins

Add beans (cooked), and simmer for a further 10 mins (until mixture is thick)

"Come, come

Come, come whoever you are!
Wanderer, worshipper, lover of leaving

This is not a caravan of despair.
It doesn’t matter if you’ve broken
Your vow a thousand times, still

And yet again

Come"
