Winter Squash & Bean Stew
1 tin of mixed beans (or 250g dried beans)
2tsp oregano (or mixed herbs), 2 tsp cumin, 1tsp cinnamon, 1tsp cayenne pepper
2tbsp olive oil
1 medium onion
2 cloves garlic
One winter squash (bite size pieces)
2 tins tomatoes
Fry onion until soft, add chopped squash and sautÃƒÂ© for 10 mins (until soft)
Add herbs and spices and garlic
Add tins of tomatoes, and simmer for 40 mins
Add beans (cooked), and simmer for a further 10 mins (until mixture is thick)
