I've just hjad a lovely slice of cake wiht my mid morning coffee. It's so scrumptious I though it would be worth sharing with the world. Recipe was given to my mum by a lovely lady from her SWRI group. I make it in a 8 3/4" round tin whcih is just large enough. As noted it's very fruity and you could probably cut back on the fruit to reduce cost and still have a really lovely cake. Enjoy!
Ina Pollack’s fruit cake.
1lb plain flour
1tsp bicarbonate of soda
8 oz marg/butter
8os soft brown sugar
12 oz currants Try with less fruit, very very fruity
12 oz raisins
8 oz mixed peel and cherries
3 eggs beaten
Breakfast cup of milk (about ½ pint)
Sieve flour and soda. Rub in butter
Add sugar and fruit
Add egg and milk
Bake in 7 inch tin, gas mark 4 (177C) for 2 hours.
