need a receipe for beef stew
Hi everyone, Do any of you have a "REALLY GREAT" beef stew receipe that you would like to share? I make a pretty good one but I am looking for something different to try. I have a chuck roast about 4lbs that i will cut up for the stew. I plan on cooking it in the slowcooker.

My favourite beef stew is daube. Sorry spitfire, haven't got time to find a recipe, but if you google "boeuf en daube" or similar you'll get any number of recipes.

I love daube! The only problem is that the beef here is tough as old boots, no matter how many hours you cook it for. I've brought back stewing beef from England to France before!
Edit: type daube and BEEF unless you can read French recipes!

Re: need a receipe for beef stew
I make a goulash which works well. In essence:
Onion and garlic base.
Cubed beef marinated in salt, pepper and plenty of paprika, browned and added to base.
Add sliced red pepper and a dash of sherry
Add tinned tomatoes, tomato puree and some stock (don't make it too wet though)
Leave to slowly cook.
Part way through the process I often add some boiled potatoes, which bulk the recipe up and help thicken the stew.
Can be served with a dollop of yogurt, adding further creaminess.
Like most stews, it often tastes better if cooked then day before, refrigerated overnight and then (thoroughly) reheated the next day.

Re: need a receipe for beef stew
The quantities of each thing are up to you but this is my tried and tested recipe which I will be making again this week funnily enough:
Potatoes
Parsnip
Carrots
Onions
Swede
GOOD Beef (buy the best you can afford, preferably Organic... you REALLY can taste the difference)
50/50 beef stock and either Guinness or a really good Ale
Couple of Bay Leaves
Sprig or two of Thyme
Small sprig of Rosemary
Few dashes of Worsestershire Sauce
Couple of tbsp Tomato Puree (gives richness and colour to the gravy)
Now you could brown the meat and veggies etc but I just throw it al in a slow cooker or in the oven and cook until the meat and veggies are tender and the gravy has reduced down a bit!
Serve with crusty bread
