An alternative breakfast

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

An alternative breakfast

This morning we decided to to something different, I did herbed mushrooms & poached duck egg on toast (home made bread) was lovely. Easy to make;

Slice 2 handfuls mushrooms, crush 1 clove of garlic & add 1 tbsp of chopped thyme fry in some olive oil

meanwhile poach 4 duck eggs in a shallow pan of water with a tbsp of vinegar then drain on some kitchen towel when cooked which is about 3 minutes

slice some home made bread & toast it, spread on some butter

plate up by placing the mushrooms on the toast & put the eggs on top so the yoke drenches the mixture when you cut into it

you may need kitchen roll to mop your chin as it is gooey loveliness

That sounds tasty, although I am not sure I could stomach garlic that early in the morning!
I am trying to think of some non-sweet breakfast ideas lately, have got in a scrambled egg/chorizo/mushroom/tomato rut.

This website has some lovely breakfast salads - you wouldn't usually think of salads for breakfast, but some of the recipes sound lush. In fact it is a fabulous food website generally:

Left out watercress and spinach as well...quite partial to a poached egg atop watercress, Mmmmm

That sounds more like a really good midday Scooby snack,Nice on top of alfalfa sprouts too (anyone come across that seed lately?can't remember where I got it)

Only one breakfast for me though, it's oatmeal pancakes with Nutella and a double esspresso, or nothing.

Sadly,seeing as I have some bulk to shift,more often than not,it's nothing!

What's the difference between oatmeal pancakes and normal pancakes OJ? They sound healthier? (minus the Nutella, obviously!)

I mix oat flour in with the wheatflour,otherwise same recipe.( I'll never get a Michelin star).

In places like Leek and Uttoxeter they have Staffordshire Oatcake shops which sell these pancakes (zillion times better than my efforts) they are simply the best ever,I make a pilgrimage there every couple of years.

Isn't Nutella very healthy then???!

Oldjerry skipping breakfast means your body holds on to the food you've eaten so skipping breakfast can mean you lose weight slower.

Bonnie the garlic because you only use one clove isn't overpowering, it also means the food is seasoned with something other than salt

If you want loose a bit of bulk OJ I find self assembled muesli works well.
Half a a bowl of raw porridge oats plus milk to wet it
tablespoon each of linseeds and sunflower seeds
Couple of table spoons each of sultanas, almonds, hazel nuts and natural yoghurt
spoon of jam, stewed fruit or honey if you want to sweeten it.

The seeds, oats and nuts all give slow release energy plus something in the linseed holds your appetite at bay. A big bowl of this at 07.30 and I can do manual labour all day without even thinking again about food until about 16.30.

Now I feel really strange, when I lived in civilisation with a wonderful Indian takeaway round the corner, I always bought extra so as I could have cold curry and bhajis for breakfast ....... I do miss that :silent:

Oh If you like spicy breakfasts try shakshuka

Its fab for breakfast, lunch and dinner :mrgreen: and easy to make too. I've come across all kinds of recipes for it but start with a spicy tomato sauce add whatever else you fancy. My most recent incarnation included mushrooms, wild garlic, then poach your eggs in the sauce.

My favourite breakfast which I make every day:

:tongue3: soup, made with 1) leftover cooking water, 2) some nice home made stock (I keep tubs of that in the freezer), 3) whatever was left from last night's meal, 4) clove of garlic, 5) a bit of precooked pumpkin :tongue3: (in winter) or umm ... I forget what I do in summer, it's so long ago!
