My courgette glut is still going on, although as a bonus I got £2 selling 3 golden marrows to the local farm shop. Yay!

Yesterday I found a new recipe for the courgettes that was really nice.

LEMON COURGETTES

Grate (or julienne) a pound or so of courgettes. I used golden ones because that's what I'm growing this year. Stick them in an oven-proof sealable dish, like a casserole dish with a lid, or any old dish you can wrap foil over tightly.

Blend together 2oz of butter with the grated rind and juice of a lemon, salt and pepper and mixed herbs

Dollop the lemon butter over the courgettes, put the lid or foil on, and bake in a moderate oven for 20 minutes. Give them a stir to distribute the lemony herby butter all through the courgettes and serve as a side dish.
