Carrot Chocolate Cake - (Egg Free)
This cake is wonderful - we were making carrot cake this morning when J announced that he wanted chocolate in his carrot cake... well both Pauline and myself thought that sounded horrid but I found a recipe in the Boxing Clever Cookbook and it's so delicious that I thought I should do the right thing and share it with you all... well at least the recipe!
"This cake is made without eggs. It doesn't rise much, but is very moist, dark and full of chocolate flavour." - I second that - J hasn't tried it as he's fallen asleep on the sofa but I'll add his verdict later.
350g (12oz/1.5 cups) carrots, peeled and grated
150g (5oz/0.75 cup) granulated sugar
125ml (4fl oz/0.5 cup) vegetable oil
225 ml (8 fl oz/1cup) boiling water
175g (6oz/1.5 cups) wholewheat flour
1.5 tsp baking powder
125g (4oz/0.5 cup) cocoa powder, unsweetened
1 tsp cinnamon
pinch of salt
1. Preheat oven to 180C (350F/gas 4)
2. Mix together carrots, sugar and oil in a large bowl - pour the water over the mixture.
3. In another bowl (why??) mix together all dry ingredients. Add to the carrot mixture and stir well.
4. Pour into a lightly greased and floured 20 cm (8") square pan and bake for about 35 mins, or until a knife inserted into the centre of the cake comes out clean.
5. Remove from tin and cool on a wire rack.

oooh that sounds tasty!

YES - I do recommend the book. Pauline (P999J) had a copy when we visited - I think she said it was the third she'd had cos everyone saw it and wanted one... I ordered one, and so did a few others from neeps.
It's got loads of interesting and seasonal recipes in it.... there is a website somewhere - I'll find it for you.

Oooh yes...this does sound yummy.
Gonna give this a go definitely, at least when the weather's cooled down somewhat - which should be about the end of September.
