I have a hand-cranked iron mincer with a couple of changeable discs to alter the coarseness of the mince. It’s very effective, but it does take quite a bit of work to crank. Mincing the first 2-3kg of meat is straight forward but once past 10kg it turns into an endurance exercise. This is us in action a few years back…

The blog has a few sausage recipes buried in there, too.

I've going sausage crazy after my gran gave me her electric sausage maker. I'm sure it's only a cheap one, makes a racket but does the job. I've even been brave and made some salami and chorizo.
