The whole reason for the selfsufficientish website was to offer a place where anyone can ask, HOW DO I...? So who knows why it has taken us so long to have a HOW DO I? section, but here it is. So if you want to know how to do anything selfsufficientish then here is the place to ask.

Has anyone got a good recipe for hot pepper sauce please they're willing to share. Encona style not sweet and preferably using dried chillies.

Our chillies have done particularly well this year but we already have half a 3 litre sweet jar full of dried from previous years. So we'd like to do a bit of stock rotation :lol:

I've got a couple of recipes I found online, but they don't seem to have a good shelf life and need storing in the fridge etc. I can't see the point in making something I can't use up - they might as well stay dried in that case.

If anyone's interested I can post the one's I've got.

Sorry GA I can't help but want to bookmark this page in case any good recipes come up. My ears prick up when I hear that name Encona. :iconbiggrin: And like you I've got tons of last year's ones dried so I didn't even bother growing any this year!

By the way I thought the only crop you got this year was radishes? :lol:

Outdoors :lol: :lol: Oh and we've got 2, yes 2, sprout plants (I loathe sprouts).

Tomatoes in the polytunnel, and chillies on the windowsills :iconbiggrin:

We have a varied diet. :lol: :lol:

It's desperately hanging on to its skin - but we've won the bet with our postie that it wouldn't survive the first winter. He may be right about the second one though :oops: :lol:

Damn. No recipe yet! My ears also pricked up at the mention of Encona. I'm addicted to the stuff unfortunately - even had it with dinner tonight. I import it from the UK in my luggage every time I come back here.

Taco Bell® Fire Border Sauce®

1 6-ounce can tomato paste
3 cups water
3 tablespoons vinegar
3 tablespoons finely minced canned jalapeno slices
1 tablespoon chili powder
1 tablespoon dried minced onion
2 teaspoons salt
2 teaspoons cornstarch
1 teaspoon cayenne pepper
1 teaspoon sugar
1/4 teaspoon onion powder
dash garlic powder

1. Combine the tomato paste with the water in a medium saucepan
and whisk until smooth.
2. Add the remaining ingredients and stir until combined.
3. Heat mixture over medium high heat until it begins to boil.
Continue to cook for about 3 minutes, stirring often. Remove from
heat.
4. When sauce has cooled, poured it into a sealed container and
refrigerate.
Makes 3 cups.

I've already made it :oops:

I'm in the middle of swapping everything between laptops (I may have mentioned new pink laptop :lol: ) so my recipe database hasn't shifted yet.

I made it up though from a couple of other recipes, neither of which quite fitted the bill. It's yummy and hot, hot, hot!

When I have the recipe I'll post it.
