MMM...? Courgette soup

Here you are - thankfully I had it already typed up!!
COURGETTE, BASIL AND PARMESAN SOUP
3 1/2 lbs (1.575kg) courgettes
4oz (110g) butter
2 onions
3 pints (1600ml) well flavoured stock
3oz (75g) parmesan
Big bunch of basil
Sweat chopped onions in butter with the pan covered over a low heat.
Slice courgettes and put on top of the onions and let them sweat with the lid on for about 10 minutes.
Add half the stock and bring to the boil. Simmer until tender. Stir in most of the basil roughly chopped.
Process when cool.
Now add most of the parmesan and the rest of the stock. Reheat gently. Season with salt and pepper if necessary.
Serve with a bit of parmesan sprinkled on the top and a few basil leaves to decorate.
I also made curried courgette soup which was easy - just sweat an onion, a chopped up spud or two and a load of courgettes. Add a couple of teaspoons of curry powder. Add stock, cook a bit then liquidise. Voila!

My standard recipe:
Sweat off chopped onions in butter or oil, add loads of chopped courgettes and very little water plus veggie bouillon. Cook until soft. Wizz through until creamy, add pepper and nutmeg, finish off with cream and chopped parsley. Addition of garlic (at the sweated onions stage) optional.

Can I use oxo cubes as the stock or does it need to be a vegetable stock?

I have some chicken stock so will try with that. Will go with the curried type soup too I think - made a carrot and curry the other day that was delicious!

I have just made some of the courgette and curry soup and it was delicious!! I thought it might be really watery and not being a huge fan of courgettes, not very flavoursome but I added some chillis too and used chicken stock. Thick and yummy!

I think courgette soup is one of my all time favourites now - I do add other bits and bobs too though - never the same recipe twice

My favourite courgette soup recipe (and the one way I can persuade DH, who thinks courgettes are a waste of space, to eat them) is even simpler.
Grate courgettes and put in pan with butter, pepper, salt and grated nutmeg. Cook gently until courgette is soft. Puree, check seasoning and serve. It tastes as though you've added cream.
The othet tip I've heard, but not tried (and which isn't very selfsufficientish) is to add a cheese triangle (eg laughing cow/Dairylea) to any courgette soup. Supposed to be v nice, but I like the basic version
