...find a use for over-ripe bananas?

The whole reason for the selfsufficientish website was to offer a place where anyone can ask, HOW DO I...? So who knows why it has taken us so long to have a HOW DO I? section, but here it is. So if you want to know how to do anything selfsufficientish then here is the place to ask.

I often have a few over-ripe bananas around - i eat a lot of the fruit is there a use for the inevitable few that do go too far the wrong side of ripe?

I use them to make banana smoothies for breakfast or banana bread. I'd post the recipe but I'm not at home until tomorrow . . .

I also use them to make banana cake.

However, if I don't want to make it right now I just stick the bananas in the freezer until I am ready to make it. Frozen bits of banana are also good for making smoothies.

banana cake, fried banana sandwiches (see breakfast thread for the recipe) add to custard, rice pudding or bread and butter pudding

banana smoothes, banana nut bread, banana muffins etc. i mash them up and then freeze them in ice cube trays, then when they are frozen pop them out into a plastic freezer bag, they bake up great and make smoothes nice and cold. :thumbright:

I've never liked the thought of banana sandwiches, but I love bananas on toast. Mash them up while you're making the toast, then just spread them on. The go all warm and sweet.

Ah, you see Rosey, you should have bananas sliced in a sandwich, and they mustn't be too ripe. Mashed is only great for toast, or in baking etc.

My OH recently made me a cheese, chutney and banana sarnie - now that was yummy!

I'm a bit strange about over ripe bananas - I'll happily turn them into banana bread but if I eat a very ripe banana I gag - there's nothing wrong with it - I think I just find the texture a bit strange.

I cut out any soggy or black bits and given them to the chooks as I can't bear ripe bananas. I prefer them firm and slightly green.

Can't stand them in 'lumps' in puddings either - the thought of banana custard is vile. :pukeright:

Yes great for the compost Bin! put the whole banana in a mature compost bin and in a few weeks the skin will be packed with bramblings.
