In years past I have only canned corn relish, and all the rest of the corn I froze. However this year we ordered two cases of Minnesota cherries, so I had to save some room in my veg freezer, so I canned some plain corn also.oldjerry wrote:Do you use a canner for the corn? I did the first batch using the method prescribed in all my canning reference books---qt jars, 10 pounds pressure for **85** minutes. Yes they do all say 85 minutes. As could have been expected, the corn actually "caramelized" in the jars. Not sure yet how I am going to use it??
My friend does all her corn by bringing it to 15 pounds pressure, leaving at 15 for 10 minutes, then turning the heat off and leaving it to cool. Hers is all fine, and thus far she has never lost anyone to botulism, so that it the method I use now!
When I do corn relish, I water bath it for 20 minutes, and it turns out great!

just picked all me cherries 15kg
just put 15 litre wine on the go
6 litre cherry brandy
3 litres cherry whisky
3 litres cherry vodka
now what to do with the rest still got another 3-4 kg on tree under ripe

Jam? Conserve? Pie Filling? Frozen with a mite of sugar for desserts through the winter? Crepes? Cherry Bavarian? Mmmmmm! I have two cases of cherries on order, and can't wait until they get here. We love cherries---can you tell?

We are finally getting tomatoes. Doesn't look like the usual harvest this year, but we'll be happy with any we get.

Picked one and a quarter kilo of apricots last week which are now dried. I'm quite pleased as it's only a 2 year old tree and although it was smothered in blossom back in February, I couldn't see many fruits for ages until they turned orange.
Totally inundated with runner beans now, we're having to eat them just about every day, oh the hardships we have to suffer.

We have also just bought a canner, a Presto shipped from the States. It cost an arm and a leg but the idea is that just maybe it will allow us to do away with one of our freezers. So far all we've canned is several jars of baked beans and some chicken drumsticks in sauce, but with 40 odd chicken due to be slaughtered later (only got 18 hatched so far), the plan is to create and can lots of ready meals.
Well that's the plan anyway.

I am harvesting sod all!!! I broke my arm (in the bloody garden) a month ago so, weather or no weather, it's gone to rack and ruin for this year.
No, I tell a lie. We've had a few half-rotten strawberries and a courgette (Ha! marrow) which managed to sneak in under the weed cover. The potatoes can probably stand, but all else is mush, nettle and cleavers.

Jesus H.and I thought we were going through it. Hope it's not too sore,the garden will soon come right again and it'll give you opportunity to reaffirm how much better home grown tastes than the bought stuff.
