Uses for chutney?

You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

Diggernotdreamer's post using up mincemeat by adding it to the scone recipe set me wondering.

I've lots of jam and chutney to use up and I've already given a lot away. It isn't hard hard to use up jam, ice cream sauce & top of sponge puddings come to mind. But chutney? There's a limit to how many ploughmans you can eat! Any ideas?

I would agree with that, I don't like it much, but if I have been given it I use it to add a bit of something else to curry or casseroles, the vinegar in it is also a useful tenderiser for cheaper cuts of meat for stew

Blitz it up and add it to tomato ketchup to make a lovely fruity brown sauce.

on pizza in the tomato sauce works well too.

i had a jar of overly sweet and sickly chutney and mixed bits in with pizza, into pasta dishes etc.

Made lamb burgers for OH this evening using.....
1lb minced lamb (reduced price this morning)
1/2 med onion, finely chopped
2 cloves garlic, crushed
big handfull breadcrumbs
2 heaped tablespoonsBANANA CHUTNEY!
1 egg
Pinch ground coriander
salt and pepper

Squidged everything together and fried a small ball of the mix to check seasoning. Then went ahead and made 4 big burgers which I cooked in a griddle pan on a med heat about 5 mins per side.

OH liked!

Also made a salsa from RED ONIONStomatoes, fresh coriander and left over italian salad dressing. Don't you just love it when a plan come together!

It adds a tangy, rich layer under the cheese on melted cheese on toast.

I like a bit stirred into red cabbage (cooked), as a side vegetable.
