Hello.

My name is henry, this is my first post here.
I am 31 & english but i live in rural south france

Me and my partner enjoy foraging. We collect herbs, berrys, mushrooms and flowers for our cooking.

There is one spot where over the last year we have found both morrels and ceps. But to our astonishment 2 days ago we spotted a truffle poking out the ground. I guess the rain had removed some of the soil as i was under the impression that they were found deep underground. It was quite rotten and at one point we really thought it may be a animal poo and not a truffle. We took it inside and did a google and indeed it looked like one. So we went back outside and had a little dig about. After 45 minutes this is what we found.

We got a local guy to identify them as Black Summer Truffles.
They are not as sought after and strong smelling as winter ones but still what an amazing find!

I had never tried them before so i grated some into my scrambled eggs and omelette. Loved it. Nice nutty/earthy taste
As we have over 1kg of them we are unsure what to do with them all.

We'd like to sell some of them but apparently round this particular part of france they do not sell for much at all
either way i'm thinking to make truffle oil, butter, dry some, freeze some, preserve some.

any ideas or input much appreciated!

There should be local shops or markets that would buy them, the going rate for black summer truffles is nothing compared to other truffles that can be thousands per kilo, I was paying 150-180 euro per kilo locally near Perpignan when I was there last summer.

Amazing! I am really jealous ! I am in the South-West of France, bang in truffle country but never have seen any pocking out of the soil. Were they under oak trees, what sort of terrain? What did you end up doing with them? Oil would have been my preference. Very exciting stuff!
