Lavender freezer cordial
Here's a little concoction of mine. Lavender cordial that you keep in the freezer and use as you need it.
1 cup sugar
1 cup boiling water
1 cup lavender flowers
Lemon juice (optional)
Dissolve the sugar in the boiling water, add the lavender flowers and allow to steep (overnight if possible).
Strain off the liquid and freeze
To drink - scoop out a teaspoon full of the frozen syrup into a glass and add water (and lemon if using). The syrup will quickly defrost. Beware, the taste is quite strong so don't use too much syrup.
To decorate, freeze lavendar flowers into ice cubes then pop one or two into your drink.
I know it's got sugar in it but don't bother asking me for healthy recipes

that sounds interesting.. I haven't got any lavender though one for next year.

Does the lavender have to be fresh? or will dried lavender work?
I've got some dried lavender to make wine out of, so i might give this a go if it'll work.

do you use fresh lavender flowers or dried? I just harvested loads from my mums and I'd love to try making it but I'm not sure if I have the patience to wait til they dry!
