spiced apple & walnut chutney recipe
for those that wanted it, here it is - sorry its late, been rather busy.
spiced apple & walnut chutney
900mls malt vinegar
450grms light soft brown sugar
900grms cooking apples peeled, cored and roughly chopped
450grms onions chopped
8oz raisins
1oz english mustard powder
1oz ground ginger
2tsp yellow mustard seeds (optional)
2tsp mild curry powder
20grms salt
1 tsp cayenne pepper
4oz walnut pieces.
put the vinegar and sugar into a large pan and bring to the boil. then add everything except the walnuts
bring back to the boil cook, stirring reguarly as it thickens, until it is well reduced and thick- remember it will thicken more as it cools.
stir in the walnuts spoon into sterilized jars, and seal with vinegar proof lids
it will keep for up to a year
makes 5lb
preperation time 30 mins
cooking time 30mins to an hour.

I finally got to making apple chutney yesterday, only not this recipe because I haven't got half the ingredients for this one, and found one that used a lot of pumpkin pie type spices which appealed more to me and then I bunged in a load of chopped walnuts at the end!
The one I did said to cook very slowly for at least 4 hours! Well it was ready after about 3, so I sat and cracked walnuts whilst it was cooking - quite an enjoyable task on a dull wet afternoon.
If it is any good I will post the recipe, but you'll have to wait for a month before it matures.
