You all seem to be such proficient chefs. Well here is a place to share some of that cooking knowledge. Or do you have a cooking problem? Ask away. Jams and chutneys go here too.

I had just made jam recently and I also was afraid if it not settling properly. So instead of ending up with a wasted batch I used ****** pectin. It comes with a sheet full of recipes so you can be almost guaranteed to have a good batch if you follow the directions properly. lo and behold the strawberry peach jam i made came out great and everybody who had some loved it.

Never heard of it, sorry.

I bought a bottle of certo pectin and it sits in the cupboard unopened as I hadn't realised that it had sulphates in it when I bought it.... no I'll stick to lemons or cooking apples. I don't want weird preservatives in my jam thanks.

Word of advice for Jam Newbies:

If you're reusing jars, make sure that you use plastic sheet thingies (can't remember what they're called) on top, between the jam and the lid. I made the mistake of not doing this, and my jam tasted particularly like pasta sauce...

Silverspoon have powdered pectin without preservatives in it. Unfortunately, it's very, very difficult to get anywhere. I have now ordered some direct from the company; they don't normally do that, but they have a batch of recently out-of-date stuff which they are selling off cheap...

Made "5 berry" jam this morning.

This is a tip you won't find in any book on jam making (at least, I've not seen it in any!): make your jam early in the morning, before the wasps and flies wake up. A friend was just telling me yesterday how he remembered the wasps he used to find in his mum's jam... :pale:

I always prepare the fruit the night before (or two or three nights before!); by next morning there's enough juice not to stick to the pan while cooking, so no need to add water (never understand that bit in the recipes - it only has to be boiled off again!).

****** is powdered pectin used for making jellys and jams. You can find lots of different recipes on their website for use with ******. Not just jams and jellys but relishes, smoothies, apple butter, and jelly candies.

yeh i use that - nothing harmfull in it.. its made out of apples - and the advantage over using lemon or apples is in my experience things often taste of.. well.. lemon or apples - aldo sometime you don't want to add more liquid. it is the business when making strawberry jam, imo

Im not hiding who my employer is. Im just asking what peoples opinions are about ******. It can be good or bad. If i was advertsing I wouldnt want any negative responses. Im sure people comment on products all the time here.

Is it available in other countries outside the US? I haven't heard of it! We have French jam sugars here but I don't use them or add any pectin or other things from packets to my jam or jelly.
