I'm doing cous cous for dinner:
Cook with stock instead of just boiling water, once its done mix in some olive oil, big handful of baby spinach, cubed feta, cherry toms and olives and then squeeze of lemon and chopped coriander.
hmmmm, great on its own or as a side with lamb, chicken or halloumi kebabs. I do this one a lot for BBQ's.
