Uh, so tonight is sausages, beans and bubble and squeak probably with a fried egg on top cos I have so many eggs!

This is the bread pudding textured one. Bit weird but not unpleasant. As usual I nabbed it off the internet and can't remember who to thank for it
By the way we added the syrup and it still wasn't very sweet.
250 g Parsnip
200 g Stoned Dates
100 g Margarine
1 tsp Vanilla Essence
1 tsp Bicarbonate of Soda
1 tsp Cinnamon
300 g Self Raising Flour
2 Bananas (pureed)
Water
Optional - Golden Syrup - add a big tbspful if you want a sweeter cake.
1 tsp vinegar
Pre-heat Oven at 170C
Peel and chop Parsnip then boil it until tender.
Take Parsnip out of water and blend (or mash).
Chop dates roughly and put them in a saucepan, cover them with water and leave until the dates start to dissolve, then add Vanilla Essence, Margarine, Pureed Bananas (and Syrup), and Cinnamon.
Take off the heat once margarine has melted.
Add date mixture to Parsnip and blend again (or mix thoroughly).
Stir in vinegar at last minute.
Sift Flour and Bicarbonate of Soda.
Mix well.
Add little by little to Parsnip mix, add water if the mixture is too dry.
When finished, whisk.
The mixture should be dropping consistency (not runny or dry).
Put mixture into a cake tin.
Put into a preheated oven for about 1 hour.
Check after 30 minutes as ovens vary.
The outside should be crusty and the inside moist.

I am cooking for friends this weekend and would love to have chestnut and parsnip soup http://www.jeremytaylor.eu/chestnut_soup.htm. Alas, it is currently minus five outside (though lovely and sunny) here in the Czech Republic and the parsnips are frozen in. I wonder if I have tin of alphabet soup in the pantry...

Ate loads of roasted parsnip over xmas, now left with one 'monster' each week until mid-march. (space is restricted, so everything has to be carefully calculated).
If you don't like them to grow big, then I suggest you don't thin them out so far apart.

My monsters are 5" (125mm) across and were thinned to between 6" and 8" apart.

Why thin? The seeds are big enough to place them where you want them. I think you are supposed to plant several every 8" then pull out the weakest but I plant one every 6". There's always one or two which don't come up here and there but I sow far too many anyway.
