Syrup Question.

Presumably the water bath is to draw the heat away quickly?

It has to be a hot waterbath at 88 degrees; it makes it all more sterile, possibly by creating more suction? Not sure exactly how it works.

If that's 88 degrees celsius, it should be enough to kill off any bugs that have got into the jars. Given that the syrup will probably be hotter than that when you pour it in, I can't quite see that it will make any difference but perhaps it catches anything that somehow survives the initial onslaught?
