Never heard that one about the compost - you mustn't EAT the leaves as they are posonous.
The stems only turn pink if they are forced or a particular variety - green is quite normal. I didn't know there were any outlawed times of the year either!
Your Rhubarb fool sounds good - I stopped pulling my rhubarb a couplde of months ago to give it a rest as it was transplanted early in the year and spent a few weeks in the boot of my car between times. It's hard to resist, though. I will be trying to force some next year if I can find a suitable dustbin/similar.
