Marrow chutney

Tonights activity is to make 4 lbs of marrow chutney.

Don't know how this is going to work. Recipe sounds good.

I'll post it if it's ok.

That will leave us with the 5 lb marrow to turn into jam, maybe.

Stoney, any chance of that spicy marrow recipe?

Sorry to nag. Would be v. grateful having just seen the size of some of our courgettes.

Marrow chutney and jam

Well, the kitchen looked like a bombsite. However, haven't managed to poison ourselves.

Marrow chutney:

(recipe says makes 5lbs)
4lbs marrow peeled & diced,
3 oz salt
2 pints pickling vinegar
2 tbsps mustard powder
1 tsp ground ginger
1 tbsp turmeric

Add salt to marrow and leave 24 hours in cool place :cooldude: . (wherever may be fashionable and trendy round your way!)

Drain off fluid,

add rest of ingredients and simmer until thick and brown.

spoon into warmed jars.

Marrow Jam:

4lbs marrow diced,
3 lbs sugar
2 tsps ground ginger (or equivalent real stuff)
juice of 2 lemons and zest

add marrow to sugar in bowl and again take round to your cool place for 24 hours.

add rest of ingredients, put over low heat till sugar dissolved.

Then put on rolling boil for about 45 minutes till setting point acheived and spoon into warmed jars.

Spend the rest of the evening trying to clear up the kitchen.

marrow and ginger jam. I could only find a huge recipe as i dont have acess to my gran's cookbook any more. it's great in winter on toast as a pick me up, but it's also wonderful stirred into rice pudding.

6lbs diced marrow
6lbs sugar
6oz fresh ginger
6 lemons
0.5 pint water

Peel marrow, remove seeds, cut into dices and weigh.
Put in a bowl and cover with sugar; let stand for 24 hours
Grate lemon rind and squeeze lemons
Skin, rough cut and bruise ginger; put in muslin bag with grated rind of lemon (I think I also put the pips in).
Put diced marrow/sugar in pan with muslin bag and lemon juice
Boil until marrow looks clear and syrup sets when tried on plate.
But into sterile jars etc

Would recommend marrow and ginger or marrow and pineapple jams. Both gorgeous and not at all marrow-y.

Freeze the soup (see courgette recipe thread)

Make corgette cake (use any banana or carrot cake recipe and substitute equal weight of grated marrow/courgette, or even half and half) and eat and/or freeze.

Swap with friends for something else

carrot cakes made with corguessts... so they taste as nicely sweet as carrot cake? because that's a fab idea for getting kids to eat stuff. not only is it cake and therefore "unhealthy" in their eyes, I'd assume it's also GREEN if you don't take the skin off...?

Here is my recipe for courgette cake, it makes a lot, so you may want to halve the quantities, the courgettes are not peeled, but it doesn't turn out green, a dark golden colour with small green flecks.

3 eggs
240ml oil
480g sugar
720g plain flour
1 tsp cinamon
salt
480g courgetes - grated
2 tsp vanila essence
50g chopped walnuts (can substitute sunflower seeds)

butter - to serve

1. preheat oven to 180C
2. whisk egg and oil
3. add sugar and beat for 3 mins
4. fold in flour and all other ingredients
5. pour into 2 900g loaf tins
6. bake for 1 hour till risen and golden
7. slice and serve buttered.
Opinionated but harmless
