We raise our own rabbit to eat, and this is a favourite recipe:

4 haunches of rabbit, or 2 saddles, browned in 1 tbsp olive oil, 1 tbsp butter

Remove and set aside, and then saute 1 large onion, sliced, adding more oil and butter if you need it. When the onion is translucent, add a few sprigs of thyme, and about 1/4 cup each chopped dried apricot and prune, 1/4 cup flour, salt and pepper to taste, and a few glugs of white wine. Stir to just incorporate the flour. Place browned rabbit in a casserole, pour over other ingredients, cover and bake on a medium oven for 90 minutes. Serve with butter noodles and roasted pumpkin. YUM!
