I have bottled my mead today. its all a bit cloudy still, but so was the ginger and lemon when i bottled that, so i'm hoping it will clear.

It tastes sweet with a winey edge to it. It smells like a brewery with a bit of wine thrown in! It doesn't taste of honey. Just of sweet.

I completely made up the recipe and everything as i went along, so i'm hoping it'll be nice come christmas. If not, i'll be giving it away as presents...

I made two batches of mead last year, both following Luath's recipe.

The first I made with Champagne yeast as it will make the most alcoholic mead but I can still only drink this mead mixed with Amaretto (sharp on its own but gorgeous with the almonds...)

The second batch I made with bread yeast which, although gives less alcohol, has a much sweeter and smoother taste and you can drink it earlier. I made it with some sloe juice and it is rather yummy!

Mine's made with bread yeast. Can't be bothered to go traipsing to the homebrew shop in town for new yeast every time!

I am little late noticing the post. A few years ago I had my first forays in making mead. Rather than risk using lemons and raisons I did buy spend a little on the various powders, Champagne yeast and sadly honey (too early).
I decided on a strawberry melomel, a hopped methegin and a small mead. Keen not to end up with anything sweet or sickly, after a good 18 months maturation the results were very encouraging.
During the first racking the mead was passed through a Harris filter – a good investment.
If any body is interested, I could dig my notes when I next visit my parents.

Yes please.

Next time the pound shop's selling honey, i plan to make another batch or two, so proper recipes would be good!

its beautifully clear, smells of wine and honey (no pong!) and tastes great! its medium, fairly smooth and a gentle honey background. took a bottle round to my parents (who also liked it!) and blagged another 3 jars of honey for the next brew. its been about a year in the making, but well worth it.
