Just been catching up with this discussion. Long-running huh? Someone said there's no supplier of VWG online in Britain. There is - google Atkins diet stockists.
Sorry barefootlinzi that you had such a bad experience with the seitan - it sounds like you didn't wash it sufficiently. The water has to be clear by the time you finish - otherwise you can't be sure there are no more little pockets of raw flour. Give it another go it is worth it.

I agree, sounds as if you not washed it enough. besides the water needing to be clear when rinsing, also the mass starts to feel really tight and squeaky.
you start with a huge lump and end with about a quarter the size...but it is worth it!
please don't confuse gluten flour with vital wheat gluten, it is not the same thing.
gluten flour is used by bakers and made through a different process, not suitable for making seitan.

The first one's definitely OK, not sure about the second.
If you're planning to bake the seitan, use 1 part wholemeal flour to 2 parts VWG - otherwise it can get really chewy. It helps keep the cost down too.
