'Lo folks,

Went for a walk last night and had a good close look at the local hedgerows. I came accross all the usuals, sloes, brambles, elderberries, hazel etc but found a couple of bushes with berries on that I didn't recognise.

Having done some research I believe them to be Guelder Rose (viburnam opulus) and Whitebeam (sorbus aria) both of which are apparently edible (guelder rose only after cooking.) I was just wondering if anyone has any experience of using these or indeed any recipes they could share?

Can't help with the recipes but you don't need to take photos as we can google! I was just checking whether that Viburnum was one we saw several years ago at an ecomuseum and had to come home and google it as the berries were just so absolutely spectacular. Doesn't it make hedgerows look fantastic?

Guelder Rose is used in Russia, I have seen a few recipes for it like this one: http://www.millionmenu.info/eng/recipes ... recip1069/

I haven't tried it yet myself though. Whitebeam is very palateable if you wait till the fruits have almost bletted on the tree (difficult when the birds like them so much!). Choose really plump well coloured fruits, they are pleasantly fruity and nice eaten raw but I don't have any recipes for them as yet.
