My very kind neighbour has given me two types of peach stones and I would love to grow them espalier fashion. If possible I would like some useful tips on planting the stones, any actions one would take other than bunging them straight in the soil?

Those stones would almost certainly grow if you just put them in the soil ... suitably marked of course so you know where to look in the spring.
I don't think they would be good subjects for espalier training though unless you graft them onto dwarfing rootstock next winter.
A peach tree "on it's own roots" would probably grow to at least 25 feet and be impossible to tame, as although not many people realise it, pruning actually encourages a tree to grow stronger.
If you can find a source of dwarfing rootstock such as St Julienne then it's fairly easy and rewarding to graft and something to be proud of.
Or, just grow them as standard trees.

We have peaches galore and they sprout all over the place. They really do grow big very quickly but can be controlled by pruning, but the amount of shoots they put out for every pruning cut is amazing. I don't think I'd want to try espaliering them for that reason alone.
