oak leaf/birch sap wine anyone ever done it ?

I made birch sap wine. Luckily took a hydrometer reading before commencing to ferment and if left unaltered it would have turned out at about 2% alcohol. Added sugar then fermented but really did not like the taste. Maybe it had turned during fermentation but despite being crystal clear (just like saphire gin) it had a barky, cooked crab shell smell and flavour that rendered it undrinkable even after allowing it time to mature.

Yes i made some oak leaf wine last year and it was really tasty i think i've still got the recipie somewhere if you want it, i'll have a look through my recipie books

This is the one i use hope you like it
Oak leaf wine
7 pts of young oak leaves
3lb sugar
2 oranges juiced
1 lemon juiced + peel
1 gall water + peel
wine yeast and nutrient
method
wash the leaves and put them in a bucket, pour over 6 pts of boiling water and leave for 24 hours, strain the liquid into a pot with the sugar the orange and lemon juice plus thier grated peel stir well to dissolve the sugar over a small heat bring to the boil and simmer for 20 mins.
Allow to cool then strain adding the remaining ingredients into a demijohn and fit an air lock
After about 4 to 5 days top up the demijohn with water when clear about 3 to 3 months rack into another demijohn and leave for another 2 months then bottle allow 6 months to a year for best results
mind you i could't wait a year and it tasted great
