Pepper Jelly

On sunday i got a box of peppers (small bell, about 50 i think).

Someone at work yesterday suggested making Pepper Jelly.
I've had a look, and i can't find a recipe anywhere. It sounds like it would be rather tasty.

Anone got any ideas?

Or anything else i can cook with them (having stuffed peppers tomorrow, had stir fry today)

I saw your post and have been in my extensive library of receipe books and found you a receipe of hot pepper jelly

3 medium red chilli peppers
4 medium sweet red peppers
3 medium green peppers
1lb cooking apples weight when peeled and cored
3/4 pint cider or white wine vinegar
2lb sugar
6 fl oz certo

cut and chop the chilli peppers remove seeds if you want it less hot
halve and deseed the other peppers cut them into 1/2 inch dice. cut the apples into a similer size place these into a large saucepan or preserving pan with the vinegar and cook for 8 to 10 mins or until tender on a low heat then add the sugar and stir until dissolved but unbroken,once dissolved boil for 5 mins then remove from heat and add the certo stir well to blend it in spoon into hot bottling jars and seal it will form a jelly within a few days keep in cool place.

please remember if you are dealing with chillies the seeds are exceptionaly hot and can burn the skin make sure you wash your hands thoroughly after use

i have not tried this receipe yet, but it is from a cook called Marguerite Patten who is from my mums era so it should work

you could also try the internet, of course i find it a great help (i'm deaf) so searching the internet is a must for me

try putting in pepper jelly into your search field and see what comes up. or i will try for you and let you know, once i have feed and milked the goats of course

Thankyou for all the suggestions.

I put in bell peppers into google, and there were no recipes that jumped out at me as looking good!

That jelly looks excellent though, i'll be making that Sunday methinks!

sorry for the delayed reply but i have had no internet for nearly a week (long story)

Certo is a syrup that contains pectin it must be added to fruits that don't contain it. otherwise jam won't set properly

you can buy it in most supermarkets (thats where i get mine from)
