Making elderflower coridal WITHOUT citric acid - any ideas?

Can't get hold of it here. Confused faces in chemist. Must be a translation problem :?
Can I use extra lemon? Have a tiny freezer and not getting a chest freezer until later in the year so would prefer to bottle it.
But I must make it today... there are gangs of kids out with sacks trawling the countryside collecting elderflower for their mammas... and I'm sure they are eyeing up my trees too [paranoid emoticon]

Any tips gratefully received. Many thanks!

I don't know whether it'll keep quite as well with the lemon juice, but it does contain citric acid, so I can't imagine why not! Does it get boiled? That would remove any "bugs" that might get in with the natural juice...

what about champagne instead

I think you can make it w/o citric acid, but maybe it won't keep as long so better to freeze. Why not make elderflower champagne instead? It doesn't need citric acid (only water, lemon, elderflower and sugar) and is just as easy to make as the coridial. Do a quick google search and I'm sure you'll find a recipe.

thank you both for your replies. I trawled for hours looking for a recipe but couldn't find one. I finally went to town for one last attempt and was successful :cheers: I had been translating 'citric' and 'acid' to chemists and only getting confused faces. What I should have done was go to a baking shop and asked for 'lemon water'! You live and learn. Anyway, all was well in the end and there were still plenty of eldferflower heads left for making cordial. Also lots of left over for elderberry jam and cordial later on - yum!
