Winter wine ingredients

Here in NZ we are in the middle of winter.
I have a stack load of apples to use up, but apple wine on its own is tasteless
Is there anything I can pick at this time of year to add flavour?

do you have sloes?
parsnip wine is sposed to be good....

apple and ginger? ok you would have to buy the ginger i guess....

No, I don't think we have sloes, at least not around here anyway

I have ginger growing, but it is not big enough to dig up yet, but maybe worth buying some if it makes a nice wine

Dam, just about to answer my own question - I have just remembered I froze a load of elderberries

any combination of Rubarb, ginger root (fresh not powdered) and rasins/sultanas or even better if you can find em are muscatels.
a bit of cinomon stick can also be nice. Dried elderflowers also go well with apple to make a delicate and floral wine, as does dried jasmine flowers.
