Apples

Went to pick the last of the apples off a wild apple tree near us today, we think they're Bramley apples but can't be sure what with being in NZ an all. I made a pie and it was yummy if a little tart ... could have done with maybe ice cream or custard to compliment but we just ate on it's own in the end. I saved the seeds from the apple, which were white not brown and was thinking I could try to pot them up and see what happens.
Why were the seeds white though?
Were they just too immature or is it just the nature of that apple variety?
I think the tree is a very old tree so would like to see if I can grow one of the seeds.
